The malting process The already pre-cleaned barley is thoroughly washed by soaking and the steeped grain is provided with adequate oxygen. During steeping, barley as a natural product is provided with sufficient water to start the desired biological and biochemical reactions by growing the kernel. Within two days the water content of the barley is increased from approx. 12% to approx. 42%. At the BAMBERGER MÄLZEREI the quality of drinking water for use in the steep-house is assured by four own springs - in fine with our quality philosophy we only use fresh water in production. |
